Broth for the changing season

This is less a fixed recipe than a household practice. Save sound vegetable ends through the week, then let water, salt, and time turn them into the beginning of another meal.
Build the basket
Onion skins, leek tops, celery leaves, mushroom stems, and herb stalks all belong. Skip anything bruised beyond use or strongly bitter.
Keep the simmer quiet
Cover the vegetables with cool water, bring the pot just to a boil, then lower it. A gentle hour draws flavor without muddying the broth.
Finish by taste
Strain before salting fully. Use the broth within several days, or freeze it in the portions your cooking most often needs.
